hi Elise I would be very pleased to give you recipes from my country, if you want I have a very good recipe called "gnocco fritto":
FOR THE MIXTURE:
500 g of flour 0
250-260 ml of sparkling or normal water
30 g of lard
1/2 teaspoon of baking soda
salt

TO FRY:
seed oil

PREPARATION:
Prepare the dough by mixing all the ingredients together. Form a ball (a firm dough must come to you) then you can start rolling it out with a rolling pin and making squares with the dough become thin then make the oil scale in a pot and when it is hot add the pieces a little at a time and remove them when they become golden (they will swell like cushions) finally put them on a plate with some paper on them.

In the traditional recipe no type of leavening agent is foreseen: the presence of sparkling water causes a sort of natural leavening. In this way the pieces of pasta swell in frying and turn into a golden and soft delight, albeit crunchy at the first bite. If you want to try in another way, do not put the baking soda and then let the dough rest for 2-3 hours wrapped in a tea towel, taking it up again to briefly re-mix it every 30 minutes. Which you would have done immediately with baking soda.
I hope you understand!!! bye bye
